Ground Beef, Butternut Squash, Sweet Potato, and Swiss Chard Hash

We recently subscribed to an online farmer’s market and receive a box full of organic fruits and vegetables every week! This recipe uses vegetables from this week’s box including butternut squash, swiss chard, and onion. Combined with our The Jerk Jamaican Spice Blend and other kitchen staples, this recipe provides a satisfying, healthy alternative to family cooks on a busy schedule. Enjoy!

Ingredients:

1 tablespoon cooking oil, we used avocado oil

1/2 onion, diced

1 clove garlic, minced

1 inch fresh ginger root, peeled and minced

1 pound ground beef

2 tablespoons Little Bottles The Jerk Spice Blend

1 teaspoon sea salt

1 tablespoon tomato paste

1.5 cups butternut squash, diced

1 cup sweet potato, diced

3/4 cup chicken stock

1 bunch swiss chard, stems removed and chopped

Instructions:

In a large sauté pan, warm oil over medium high heat, then add the onion, garlic, and ginger and stir until translucent, about 3 minutes. Add ground beef to the pan and brown.

Once beef is browned, add The Jerk Spice Blend and tomato paste. Gently stir to incorporate the tomato paste and spices with the ground beef. Add squash, sweet potato, and stock to the pan.

Gently stir to combine all ingredients and cover. Reduce heat to medium. Cook for about 12 to 15 minutes, or until the squash and sweet potato are fork tender.

Add the swiss chard over the top of the beef mixture and cover. Cook for about 5 more minutes. At this point, the swiss chard should be wilted but maintain its vibrant green color.

Remove pan from heat. Serve from the pan or your favorite serving dish.

Notes:

Traditional jerk seasoning may seem like an odd choice for ground beef, but the maple sugar, nutmeg, cinnamon, and thyme in our The Jerk Jamaican Spice Blend combines nicely with the butternut squash and sweet potato. Serve with a side of herbed white rice and flat bread.
