Spiced Ground Beef with Kale

What do you do with Kale and a Little Bottles spice blend? Create a delicious and nutritious meal in about 30 minutes. This recipe combines ground beef, hearty Kale, and other kitchen staples for the perfect weeknight meal.

Ingredients:

1 tablespoon cooking oil, we used avocado oil

1 clove garlic, crushed (you can substitute 1/2 teaspoon dried minced garlic)

1/2 medium onion, diced (you can substitute 1 tablespoon dried minced or flaked onion)

1/2 red bell pepper, diced

2 celery stalks, diced

1 carrot, diced

1 pound ground beef

2 tablespoons The Rojo Spice Blend

1 (14.5 ounce) can diced tomatoes

2 cups chopped Kale, about five Kale leaves with stems removed

1 teaspoon sea salt

2 tablespoons finely chopped parsley

Instructions:

Bring a sauté pan to medium high heat. Add oil, then garlic, onion, red bell pepper, celery, and carrot to pan and sauté for about 2 to 3 minutes.

Add ground beef to pan and cook until browned, breaking up the beef as you stir.

Sprinkle the Rojo Spice Blend, diced tomatoes, and sea salt evenly over the beef and vegetables and gently stir to combine. Top the beef mixture with the chopped Kale. Lower heat to medium and cover.

Cook for about 8 to 10 minutes or until the Kale has softened. Remove the pan cover and gently stir the beef, vegetables, and Kale, combining all ingredients.

Remove pan from heat and spoon mixture into your favorite serving dish.

Sprinkle parsley over the top and serve hot. Enjoy!

Notes:

Serve the ground beef and Kale with a side of steamed rice and flat bread.
