Lettuce Wraps with Spiced Ground Turkey

Fun, delicious, and healthy, these turkey lettuce wraps deliver big flavor without the carbs of a traditional wrap.  Add a large spoonful of the ground turkey mixture to a lettuce/romaine leaf and top with yogurt lime sauce.  Another option is to start with a layer of cilantro rice, add the ground turkey then top with Yogurt lime sauce. If you like bold flavor, add your favorite cheese and hot sauce.  Double the recipe and combine the leftover turkey with scrambled eggs for an awesome breakfast scramble or have turkey taco salad for lunch!

Ingredients

Ground Turkey Lettuce Wraps

1 head Butter lettuce and/or Romaine

1.5 pounds ground turkey

1 sweet onion diced

2 large carrots diced

½ red bell pepper diced

3 tablespoons tomato paste

½ cup chicken stock

2 or 3 tablespoons Little Bottle’s ROJO Spice Blend

Salt and pepper to taste

1 tablespoon avocado oil

Yogurt Lime Sauce

2 cups Greek yogurt

¼ cup cilantro chopped

Zest of 1 lime

Juice of 1 lime

1 1/4 teaspoon sea salt

Optional:

Basmati cilantro rice

¼ cup chopped cilantro

Preparation

To make the Yogurt Lime Sauce, combine Greek yogurt, cilantro, lime zest, lime juice, and salt in a bowl. Cover and refrigerate for about an hour.

Cook rice according to package instructions. When finished, add a tablespoon of butter and chopped cilantro. Cover and wait a few minutes for butter to melt, then fluff with a fork to mix in the cilantro.

In a large skillet, heat the avocado oil over a medium heat. Add onion, carrots, and red bell pepper and sauté for 2 to 3 minutes.  Remove and set aside. Add ground turkey and 2 tablespoons Little Bottles Rojo Spice Blend to the pan and cook until browned.  Stir in tomato paste, chicken stock, and add more Little Bottles Rojo Spice Blend to taste, if desired.

Add back the onion, carrot and pepper mixture and simmer over low heat for 10 minutes, stirring frequently. If the turkey dries out, add a little more chicken stock. Season with salt and pepper to taste.
