Spiced Maple Fudge

This fudge recipe is a delight any sweet tooth will enjoy. Spice in sweets is unexpected, but done with just the right touch, this fudge is a candy game-changer. Making this perfectly requires a good thermometer!! We recommend a digital thermometer for accurate readout.

Ingredients

  • 1 cup brown sugar

  • 1 cup white sugar

  • 1 cup heavy cream

  • 6 tablespoons butter

  • 1/4 cup Vermont maple syrup

  • 1 tablespoon vanilla

  • pinch of salt

  • 1 tablespoon Little Bottles Spice Co THE JAVA

Instructions

Combine both sugars, cream butter and maple syrup in a saucepan and place over a medium heat. Bring to a boil; lower the temperature and continue to stir. Cook the mixture until it achieves the softball stage. I use the thermometer to see when it gets to 238 degrees exactly - it will take several minutes so patience is needed. Remove from the heat and immediately add the vanilla, salt and THE JAVA. Stir until everything is well blended.

Let the mixture cool for about 15 minutes. Begin beating the mixture and you will see it thicken as it cools more. I like to take a short cut and put the hot mixture in my mixing bowl use the beaters/paddle to beat it until it is cool and pretty thick. Either way, don’t stop beating until the mixture can keep its shape on a spoon. Place in a buttered pan and spread it evenly. Let it finish cooling in the refrigerator. Cut into small pieces and enjoy!
