Sunday Breakfast Scramble

We topped corn tortillas with scrambled eggs and sausage dusted with The Original spice blend. Diced, fresh tomatoes and herbs are added for a fresh, satisfying start to your day. Enjoy!

Ingredients (serves 2)

1 tablespoon butter

1/4 cup onion, finely chopped

3 eggs, combined

1 tablespoon milk

3/4 cup cooked breakfast sausage or bacon (your choice)

3/4 teaspoon The Original Spice Blend

1/4 cup diced tomatoes, hot sauce, or salsa

1 tablespoon fresh parsley or cilantro, finely chopped

4 corn or flour tortillas, warmed

Instructions:

Heat a non-stick frying pan to medium heat. Add onion, sauté for about 5 minutes until translucent

While onion is cooking, combine eggs, milk (optional), The Original spice blend, and a pinch of salt in a mixing bowl. Whisk together until slightly frothy. Slowly pour eggs into the frying pan.

With a heat resistant spatula or flat edged wooden spoon, stir eggs slowly until eggs begin to thicken. Add cooked breakfast sausage to eggs. Gently stir to combine eggs and sausage. Serve eggs over warmed corn or flour tortillas. Top with fresh tomatoes and herbs, or your favorite hot sauce or salsa.

Notes:

Combining milk and eggs adds a creaminess to the finished scrambled eggs. To cook the tortillas, we use a lightly oiled non-stick pan over medium-high heat for about 2 minutes per side or until the ridges begin to brown. You can also crisp the tortillas in the oven, or simply warm in the microwave
